Jamaican Curry Shrimp
1lb fresh peeled and deveined shrimp 16x20 or 21x25
2 Tblsp olive oil or vegetable oil
1/2 cup of copped onion
1/2 cup of chopped green onions
1 teaspoon of minced garlic
1 1/2 Tblsp of curry Powder
1/2 cup chopped tomato
13oz. Of coconut milk
Salt and pepper
2 Tblsp of butter
1.Heat oil in a large sauté pan
2.Add the curry powder, onion, garlic and thyme. Let it cook for two minutes while slightly stirring
3. Add the tomatoes in and let it cook for two minutes, again slightly stirring.
4.Stir in the coconut milk, let it cook for two minutes and finally add in your shrimp.
5.Stir quickly and let it cook for an additional five minutes. Stir in your butter.
